Avocado, Egg and Bacon – A Healthy Cooked Breakfast

Breakfast is quite often the most boring meal of the day. We are in so much of a rush that nobody spares much of a thought for this neglected meal, pouring themselves a bowl of processed food before running out the door.

Breakfast does not have to be boring! I’m going to start sharing simple breakfast recipes to hopefully inspire people to eat a bit better in the mornings and really help set themselves up for the day.



  • 2 rashers of Bacon (style of your choice, I used some streaky bacon I picked up from a local farm shop)
  • 1 EggPlate2
  • Half an Avocado, Sliced
  • 6 large Olives, finely sliced
  • 1 anchovy, finely sliced
  • 3 Tomatoes
  • 1 Spring Onion (s
  • 1 clove Garlic, finely sliced
  • 3 Tomatoes
  • teaspoon of Coconut Oil
  • Few torn basil leaves


In a large frying pan on a medium heat add a tsp of coconut oil, let it melt and then add the tomatoes.

As the bacon starts to crisp crack the egg into the pan and add the anchovy, olives and garlic.

Take the bacon out first and pat dry with kitchen roll, this helps to crisp the bacon and removes any excess grease.

Arrange the sliced avocado on the plate.

Now the egg should be cooked you can place it onto the plate along with the other items from the pan.

Sprinkle over the spring onions and basil and serve 😀 (I ate it with Sriracha)
